Traditional Winemaking

In the French-Swiss wine tradition, every gesture carries the weight of history. SIMONIUS inherits from the centuries-old experience of Propriété Veillon Au Cloître winemaking methodologies that respect the natural rhythms of grapes and terroir. Our wines are born from the encounter between ancestral techniques passed down for over two hundred years and contemporary innovation, in perfect balance that enhances the unique characteristics of Aigle’s terroir. A production philosophy that favors quality over quantity, where each harvest represents a new chapter in a story that began centuries ago.

Exclusive Quality

The story of SIMONIUS Fine Swiss Wine is rooted in the family’s centuries-old tradition, co-owner of the historic Propriété Veillon Au Cloître. For over two hundred years, this property has represented the excellence of French-Swiss viticulture, with buildings unchanged since the 17th century and vineyards among the oldest in Aigle. Our mission stems from the desire to share this unique heritage with the world, selecting and marketing the region’s finest wines.

Each SIMONIUS bottle tells a story of passion, tradition, and respect for Alpine terroir, where ancient wine wisdom meets contemporary innovation. The Simonius family carries forward this legacy with dedication, ensuring that each wine reflects the authenticity and quality that have characterized French-Swiss vineyards for centuries. A heritage of knowledge passed down from generation to generation, preserving the essence of a territory unique in the world.

2020

Bulles de Paradis

An elegant brut sparkling wine that embodies the refined French-Swiss sparkling tradition. The delicate and persistent bubbles of this Vin de Pays Romand 2020 are born from the ancient mastery of Propriété Veillon Au Cloître, where each bubble tells the story of centuries-old vineyards caressed by Alpine breezes. The fine, golden perlage accompanies fresh and mineral notes typical of Aigle’s terroir, creating perfect harmony between elegance and vivacity. On the palate, it expresses crystalline freshness and balanced structure that reflects the purity of selected grapes. Ideal for celebrating special moments or accompanying refined aperitifs, this sparkling wine represents the essence of Swiss wine art in a dance of bubbles that truly evokes paradise. A product that unites centuries-old tradition and contemporary taste, symbol of SIMONIUS excellence in selecting unique wines.

2015

Clos du Paradis - Aigle Grand Cru

An exceptional Chasselas that bears the name of paradise, born from privileged vines on the hill of Aigle Castle where winemakers found happiness cultivating this extraordinary corner. This Grand Cru represents the pinnacle of Propriété Veillon Au Cloître’s wine tradition, where the unique terroir of glacial origin with sand two meters deep creates ideal conditions for the vine. Slow vinification at low temperature enhances the mineral character typical of Alpine soil, generating a wine of elegant structure and incomparable finesse. On the nose, it reveals itself delicate with distinctive mineral notes found in a structured palate, rich with persistent aromas and a generous finish that envelops the palate. Perfect both as a refined aperitif and to accompany white meats, aged cheeses, or premium cured meats. With aging potential of 4-5 years, this Chasselas evolves positively over time, representing the quintessence of French-Swiss wine art in the SIMONIUS selection.

2020

Harmonie du Cloître - Aigle AOC Chablais

A masterful blend of Merlot, Cabernet Franc, and Gamaret that embodies the art of balance in Propriété Veillon Au Cloître’s wine tradition. This exceptional red wine is born from the steep, heavily sun-exposed terraces of Aigle vineyards, where the glacial moraine terroir offers optimal conditions for ripening these late-harvest varieties. Aged 12 months in barrique, it develops extraordinary complexity thanks to extremely low yields that concentrate aromas and tannins in the fruit. Separate vinification of each variety, followed by skillful blending, creates an intense ruby red with a bouquet of red fruits, delicately vanilla and spicy. On the palate, it expresses itself with silky and flavorful tannins, offering beautiful length and aromatic persistence that reflects the cellar’s centuries-old mastery. Perfect with red meats, game, mushrooms, or aged cheeses, this wine represents perfect harmony between monastic tradition and wine innovation in the SIMONIUS selection, with aging potential of 5-7 years.
